Winemaking Notes
The organically farmed Sundown Vineyard is situated on a steep and terraced southern slope in Medford, Oregon. The fruit was thinned to one cluster per shoot with leaf thinning to allow maximum sun penetration to produce fully golden, ripe fruit. The fruit was whole-cluster pressed and fermented in stainless steel tank at cool temperatures to promote fruitiness. The fermentation was stopped by chilling at the perfect balance of sweetness and racked off the lees.
