Tasting Notes

This powerful, compact wine greets the nose with robust aromas of anise and black fruit introducing a wonderfully earthy backdrop suggesting Pinot Noir dust and briar. Flavors are complex and concentrated, indicative of the mature vineyard site, mirroring the aromas of black fruit and grape stems. The ripe, hearty tannin structure supports secondary flavors of raspberry cordial and caramel.

Winemaking Notes

This rich and powerful Pinot Noir, sourced from thirty year old vines of 114 and Pommard clones, is grown in shallow volcanic basalt, which lends to small berries and flavor concentration. Nuestro SueƱo grapes ripen early and are harvested at the optimal balance of flavor, acid, and tannins. The grape clusters were sorted by hand prior to de-stemming with approximately 70% whole berries intact in the fermenter. The must underwent a six-day pre-fermentation cold soak at 45-50 degrees prior to heating to initiate indigenous fermentation. Each lot was punched down three times per day and pressed out after twelve days total fermentation time. The young wine was introduced to barrel within sixteen hours of pressing and was racked twice prior to bottling.
